Commissioning Guide
automated bakery production line
Before specifying an automated bakery production line, decide how saleable output will be measured and which documents will prove it. Automation of forming, transfers and recipe recipes on a PLC does not by itself raise yield. This commissioning guide is a document-comparison dossier for procurement, not an engineering stamp and not an environmental report.
Decision topic: Document comparison
Decision dossier
Document comparison
Document comparison: Sample run
The sample-run document should state how much trim and start-up dough is excluded from acceptable output. If the factory reports pieces/h without subtracting those losses, the automated count overstates saleable product. Request a product-by-product table: hydration, piece weight, working width, lanes, and recycle destination. Public references that list dough kg/h beside forming width are useful as a layout for the table, not as a copied capacity for your bakery.
Site readiness
Readiness documents should include connected load, three-phase supply, compressed air, cooling water, footprint and PLC interface I/O. For automated transfers, add who supplies the proofer or oven handover and the lane-spacing drawing. If those pages are missing, automation of the former still leaves a manual gap at the next machine. Utilities that the bakery cannot provide on the delivery window belong in a risk note, not as an implied factory visit by this intermediary.
Owner acceptance
Owner acceptance documents should list which shaping tools must be exchanged between the planned bread formats and who demonstrates the swap during SAT. Automated recipe recall does not remove the mechanical tool change. Record the time and the first-good piece weight after each swap. If training and spare parts are on a separate quote, attach that quote before signature so the automated cell is not accepted without consumables.
Industry dispute on output basis: nominal belt speed versus validated output on buyer dough. Industry dispute on cost: machine price versus installed project cost including tooling, shipping and commissioning. Neither dispute is resolved by a percentage claim on this site. Request the documents above, then compare.
Technical terms that should appear in the dossier in the supplier’s units: throughput, duty cycle, cycle time, tooling, feedstock (dough), connected load, three-phase supply, compressed air demand, cooling water, footprint, work envelope, PLC interface, FAT, SAT, spare parts and changeover. Positioning tolerance of cutting tools matters when bun diameters share a sheet with loaf moulds.
